The Role

We’re moving fast on our journey to take a cultured meat product from the research laboratory to commercial scale. Our new Food Scientist will be a key part of our Product team, working in our recently opened state of the art food development lab.

You’ll be at the heart of the ongoing development of our ground-breaking product range, with a specific focus on how we continue to develop and refine the flavour delivery of our products. You’ll combine creativity and ingenuity with scientific knowledge and insight, ensuring that our innovation leads to consistent, scalable products of the highest quality.

We’ll expect you to design and run your own experiments independently, and you’ll also work alongside our Senior Food Scientists to get to the best possible products. You’ll also connect with our other teams e.g. the Stem Cell, Materials and Bioprocessing teams and work with them and others on cross-team projects.

This role is based at our new facility in Cambridge, UK and we’ll need you to be there the majority of the time in a ‘hands-on’ capacity.

What you’ll be doing:

  • Leading the product design and development with a specific focus on flavour delivery execution in our pork meat products
  • Working with our Bioprocessing and Materials teams to improve our cell culture media and techniques to deliver enhanced flavour profiles
  • Identifying and working with external flavour suppliers/partners on flavour modifications, to achieve the desired delivery and execution within our products
  • Adjusting and improving product formulations to make them compatible with cultured meat
  • Running trials for scaling the production of cultivated meat (including troubleshooting as required)
  • Capturing and analysing process data to provide workable insights that improve flavour performance
  • Training colleagues on how to taste and give feedback
  • Conducting sensory panels focused on meat flavours
  • Technical report writing and data analysis that leads to practical recommendations
  • Managing relationships with external partners and leveraging their knowledge and technologies

What we think you need:

  • Undergraduate degree in Food Sciences/Chemistry/Chemical Engineering or related fields, and/or further qualifications (e.g. Masters) in Flavour Science
  • 4+ years of relevant industry experience working with savoury flavours, including an understanding of designing savoury flavours
  • Strong foundation in the recipe and product development, ideally also including plant-based products
  • Excellent tasting skills with the ability to describe flavour profiles and generate a flavour lexicon
  • Previous experience scaling products from kitchen to pilot plant to factory
  • Experience managing multiple stakeholders and projects simultaneously
  • Computer literate with the ability to quickly familiarise yourself with different IT systems and software
  • Ability to work independently and in a team
  • Hands-on problem-solving mindset
  • Ability to respond positively to unplanned events in a fast-changing environment
  • Excellent report writing and note-keeping skills

We’d love it if you also have:

  • Knowledge of UK, EU, USDA flavours and additives legislation
  • Experience in meat/pork flavouring
  • Experience in leading tasting panels
  • Experience in training others to taste and give accurate sensory feedback data
